You will pay more for a custom kit, naturally, but it can be a good tradeoff between building a shed from an off-the-shelf kit that may not suit your needs exactly, and paying someone to build you a shed from scratch.
Many companies that sell shed kits also offer kits for larger buildings, such as barns or garages. These kits are going to require a lot more work to put together, but they save you from having to cut everything from bare lumber. You just put the parts together according to the plan.
